Cannabis Beef Steak Pinwheels with Spinach

Cannabis infused beef steak pinwheels is a delicious savory dish that allows us to use the full plant material blending the flavors and textures to mask the marijuana and it's taste almost completely.

 2/3 pounds Thin Sliced Beef Steak
 Kosher Salt
 Ground Black Pepper
 4 to 6 Grams Ground Cannabis Flowers
 2 tablespoons Minced Fresh Garlic
 1/4 Cup Chopped Onion
 1/4 Cup Olive Oil
 10 oz Package Frozen Spinach
 1/2 Cup Grated Parmesan Cheese
 1/2 Cup Sour Cream

Part 1 Prepare Your Meat

The first step is to prep and season your beef flank steak. You can use any kind of thin sliced beef steak that you want, the better the quality the better the results. You do want the meat to be about one quarter of an inch thin so if it’s not already thin enough you need to flatten it more. You can use a meat tenderizer hammer or if you don’t have that you can use a rolling ping and some plastic wrap to roll your meat out to the desired thinness.

Once your meat is the correct thickness you can season it up with a generous amount of kosher salt and black pepper then cover it and let it rest in the refrigerator while we move on to the next step.

Part 2 Decarboxylate Cannabis & infuse with oil. Make filling.

Begin by cleaning and skinning your garlic cloves, then chop and mince the garlic and set it aside. Also prep and chop your onion into medium small pieces and set them aside as well.

Now in a heavy pan bring your olive oil up to medium heat and add in the ground marijuana flowers.

Cook and brown the marijuana flowers of medium low heat until it begins to turn brown and has a deeply medicinal and aromatic amonia smell. This may take about 10 minutes.

Now add in your garlic and onions and continue cooking over medium heat until nice and golden brown, stirring frequently and keeping covered if you want to reduce the odor.

In a mixing bowl, now pour the warm infused oil mixture over the thawing spinach. Use the heat to press and mix the oil and spinach together until well blended with all of the spinach saturated with the oil mixture.

Add in the grated parmesan cheese as well as the sour cream and continue mixing by hand until well blended.

Set aside and move on to the next step.

Part 3 Spread filling and roll meat. Chill and slice for cooking.

Take the meat from the refrigerator and lay it out flat. Then pour the entire infused spinach mixture on top of the meat and use a spatula to evenly spread the mixture to cover the entire portion of meat. Spread it as evenly as possible keeping it on inside the edge of the meat.

Now turn the meat longways and starting at one end on the narrowest side roll the meat carefully and not too tight into a nice jellyroll shape. Be careful not to squeeze too much of the filling out of the side.

Wrap it with the plastic wrap tightly and put it back into the refrigerator to marinade and chill. Chill it for at least 2 hours but even overnight will be great.

When you are ready to cook the pinwheels, unwrap and cut them into one to one and a half inch slices and place them in a pan on parchment paper or foil.

Part 4 Cooking and Serving the Cannabis Infused Pinwheels

You can bake them but for best results broil the pinwheels in a broiler about 4 - 6 inches from the heat. About 400° F for 10 minutes on one side will be enough to bring them to a nice brown top but the bottom may be undercooked.

Carefully turn the pinwheels over and put them back into your broiler. Continue broiling for up to another 10 minutes depending on how well done you want them. ( Recommend a medium )

Once they are cooked you can transfer them into a storage or serving dish and be sure to keep the pan juice to pour over the steaks.

You can use Rosin Chips (Leftover cannabis after pressing in a flat iron to extract oils) for this recipe after grinding them and doubling the cannabis amount.
These pinwheels are delicious on their own but can be a part of a great meal served with some rice or mashed potatoes.
